No-Bake Lemon Coconut Slice

When it’s hot outside, no one wants to turn the oven on. This no-bake lemon coconut slice is simple, fresh, and perfect for summer entertaining (or fridge snacking).

Ingredients

  • 1½ cups gluten-free plain biscuits (crushed)

  • ¾ cup desiccated coconut

  • Zest of 1 lemon

  • ⅓ cup fresh lemon juice

  • ½ cup sweetened condensed milk

  • 125g melted butter

Optional topping: extra coconut, a dusting of icing sugar (making sure it’s gluten free) or a light lemon glaze

Method

  1. Mix all ingredients until well combined.

  2. Press into a lined slice tin.

  3. Refrigerate for 2–3 hours until firm.

  4. Slice and serve cold.
