🍫 Gluten-Free Chocolate Coconut Bliss Balls

Ingredients:

  • 1 cup pitted Medjool dates

  • 1 cup raw almonds (or cashews)

  • 2 tbsp cocoa powder

  • 1 tbsp coconut oil

  • 2 tbsp desiccated coconut

  • 1 tsp vanilla extract

  • Pinch of salt

Optional add-ins:

  • 1 tbsp maple syrup for a sweeter treat

  • Coat with melted chocolate or desiccated coconut  

  • Add 1 tbsp chia seeds for added fiber or a scoop of protein powder for a boost

Instructions:

  1. Add all ingredients to a food processor and blend until sticky and combined.

  2. Roll into bite-sized balls (and coat with chocolate or coconut if adding).

  3. Chill in the fridge for at least 20 minutes before serving.

They keep well in the fridge for up to a week and are perfect for lunchboxes or party platters!
