Slow Cooker Beef & Veggie Stew (Gluten-Free, Of Course!)
Slow Cooker Beef Stew
This gluten-free slow cooker stew recipe is packed with winter veg, tender beef, and rich, savoury flavour! Did we mention, it’s also super easy to make? The recipe can be adjusted to make it vegan or vegetarian (swapping out the beef for chickpeas or beans, and making sure your stock is suited to your dietary needs).
Serves: 4–6
Prep time: 15 mins
Cook time: 6–8 hours on low or 4–5 hours on high
Ingredients:
500g beef or stewing beef, cut into 2–3cm chunks
2 tbsp gluten-free plain flour (for dusting)
Salt and pepper to taste
1 tbsp olive oil
3 cloves garlic, minced
1 brown onion, diced
3 carrots, peeled and cut into chunks
2 celery sticks, chopped
2 potatoes, peeled and chopped into chunks (or sweet potato for a twist)
1 cup green beans or peas (optional, add in the last 30 mins)
2 tbsp tomato paste
1 tbsp gluten-free Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 cups gluten-free beef stock (make sure you check the label!)
1 bay leaf (optional)
Instructions:
Season & sear:
Lightly coat the beef pieces with gluten-free flour, salt, and pepper. Heat olive oil in a pan over medium heat and brown the beef for a few minutes on each side. (Optional but adds extra flavour.)Add to slow cooker:
Place beef in the slow cooker. Add in garlic, onion, carrots, celery, potatoes, and any optional veg.Mix in flavour:
In a small bowl, combine tomato paste, Worcestershire sauce, herbs, and beef stock. Pour over the ingredients in the slow cooker. Add the bay leaf if using.Cook low and slow:
Cook on low for 6–8 hours or high for 4–5 hours, until the beef is tender and the veg are soft.Final touch:
Stir through peas or green beans in the last 30 minutes if using. Taste and adjust seasoning if needed.Serve:
Spoon into bowls and enjoy on its own or with gluten-free crusty bread or mash.
