Easy & Affordable Gluten-Free Chickpea Pancakes

Eating gluten-free doesn’t have to be expensive! These savory chickpea pancakes (also known as Socca) are packed with protein, naturally gluten-free, and super versatile. Perfect for breakfast, lunch, or a light dinner!

Ingredients:

✅ 1 cup chickpea flour (also called besan or gram flour)
✅ 1 cup water
✅ 1 tbsp olive oil (plus extra for cooking)
✅ ½ tsp salt
✅ ½ tsp ground cumin (optional for flavour)
✅ ½ tsp garlic powder or minced garlic (optional)
✅ 1 tbsp chopped fresh herbs (parsley or coriander work great)

Instructions:

1️⃣ In a bowl, whisk together chickpea flour, water, olive oil, salt, and spices until smooth. Let it rest for 10-15 minutes.
2️⃣ Heat a non-stick pan over medium heat with a little oil.
3️⃣ Pour in a ladle of batter, spreading it slightly to form a thin pancake.
4️⃣ Cook for 2-3 minutes until bubbles form, then flip and cook for another 2 minutes.
5️⃣ Serve warm with avocado, hummus, or your favourite toppings!

💡 Tip: Add chopped veggies or cheese to the batter for extra flavour.
